One of the most popular catches in the region, coral trout have become renowned for their incredible taste. But what are the best ways to catch and fillet them? Read on for our handy hints.

If you’re intending to fish for coral trout, you need to be aware that there are sizing and possession limits in place. You are allowed to carry 10 coral trout per bag, provided they are more than 38cm in size.

Coral Trout Season QLD

While coral trout spawn during the spring months, they can be found all year round. The best time for a catch in a shallow reef is from April to June.

How To Catch Coral Trout

  • Coral trout are plentiful in times of low light or at the change of the tide.
  • They love rocky or reef areas, which can make them difficult to spot. For this reason, going out on the water gives you the best chance of a catch.
  • Ideally, you’ll use a rod and reel combination running no less than 30lb braid and 80lb leader.
  • Look out for baitfish, which will signal any trout in the area.
  • Position your bait into the current.
  • If you’re going to throw the fish back, ensure you cause minimal harm by investing in lip grips and a hook remover.

Best Bait For Coral Trout

While a pilchard or squid will work well, your best option is fresh bait you’ll find in the area. A great choice is the yellowtail fusilier. Fillet this and leave a little blood to attract the trout.

How To Fillet Coral Trout

  • Place the fish on a clean surface.
  • Place your hand on the head while slicing the fish from its pectoral fin to its belly using a sharp knife.
  • Cut upwards, following the line of the head, until you reach bone.
  • Turning the blade and following the dorsal spines, slice down to the tail until your blade comes out the other end.
  • Tilting the fish, insert your knife near the head and run it down several times, following the bones until you reach the spine.
  • Pass your knife over the bones until the flesh separates completely. As you cut, pull the fillet until most of the flesh comes off the spine.
  • Hold the fillet in one hand and the tail in the other and pull off the fillet. Flip and repeat.
